Perfect with pita chips! * 1 medium cucumber, diced * 2 green onions, thinly sliced * 2 tbsp + 2 tbsp olive oil * 2 tbsp + 1 tbsp fresh lemon juice * 2 tbsp chopped fresh parsley * 2 tbsp chopped fresh chives * 2 tbsp chopped fresh dill * Jalapeño or Serrano pepper thinly sliced. * salt * freshly cracked black pepper * One cup plain Greek yogurt * 16 oz feta cheese 1. Dice and slice cucumber and fresh herbs . 2. To a bowl add cucumbers and green onions. Add the 2 tablespoons olive oil and 2 tablespoons lemon juice . Mix. 3. Justin on Instagram: "Recipe 👇🏾How to make the easiest carrot rice 🥕 🍚 Ingredients: 5 tbsps olive oil 1 carrot, grated 1/2 onion, chopped 2 cups of basmati rice 3 cups of water 1 stock cube salt to taste Method Wash and grate the carrot Chop the onion into small bits Measure out your rice and rinse several times in water until the water runs clear Pour olive oil into a pot and bring to medium-high heat (e.g level 7 on an induction/ceramic hob) Fry the carrots and onion in the oil for about 5 minutes, stirring it every so often Add in the rice and fry for another 5 minutes, stirring it every so often Add in the water and once it starts boiling add the stock cube and salt to taste Cover with a lid and cook on very low heat for 15 minutes (e.g level 3 on an induction/ceramic hob)
