Tapenade is a French classic from the Provence region. It’s fresh, bold, zesty and delicious! 

It’s great simply served as a dip with crostini or is super versatile used as flavour boost - spread over grilled fish, meat, as a base for a salad dressing, sprinkled over pizza or focaccia, roasties or even mixed into mash!

Ingredients:
1.5 cups mixed olives, pitted
¼ cup fresh basil 
1-2 tbsp drained capers
¼ cup extra virgin olive oil 
2 cloves garlic, minced
1-3 anchovies (optional)
1/2 lemon juice
Salt & pepper to taste 

In a food processor, simply combine all of the ingredients. Pulse briefly about 5-10 times, then scrape down the sides of the jar.  Pulse 5 to 10 more times until well chopped, but not pureed.
