Great Grains Breakfast Bars

Ingredients

  • 1/3 cup creamy almond butter
  • 1/3 cup pure maple syrup
  • 4 cups Great Grains Raisins, Dates and Pecans cereal
  • 1 1/4 cups white chocolate baking chips
  • 1/2 tbsp. coconut oil
  • 1/4 cup nonfat plain Greek yogurt, room temperature

Instructions

  1. Line a 9x13-inch rimmed sheet pan with parchment paper. In a medium bowl, microwave almond butter and syrup until bubbling, 30–45 seconds. Stir in cereal until well combined; transfer to prepared sheet pan and press firmly into an even layer. Cover with plastic wrap and freeze until set, about 10 minutes.
  2. In a medium bowl, microwave white chocolate chips and oil in 30-second intervals until fully melted, about 5 minutes total. Stir in yogurt, then drizzle over cereal mixture, spreading evenly until mostly covered. Refrigerate, uncovered, until firm, about 10 minutes.
  3. Turn mixture out onto a cutting board and cut into 24 bars.
