Transferring the hawkers to New York should have guaranteed that the flavours were shared too. In practice, some did, and some did not. Putting theory into practice doesn’t usually translate well, as doing so is the hardest. How many do you need to change a lightbulb? The moment we have one too many middlemen, we can be sure of the outcome. Likewise, we have too many academic experts or kind-hearted consultants in the form of agencies, be they government-related or trade associations; the red tape and bottlenecks will not help either. We have seen one too many hawkers, local brands that partnered with agencies or big companies to venture into Japan and the outcomes were there for the takings. Likewise, who remembers the Japanese street or food towns in Orchard Road? You know the result as well. Let's not be harsh to KF Seetoh or Anthony Bourdain. Both have good intentions and have done well to give the hawkers a great platform. In business, things either work or don't.
