Salt cod, 300 grams (about 10.5 ounces)
Floury potatoes, 200 grams (about 0.85 cups or 7 ounces)
2 eggs
Grated Parmesan cheese, 100 grams (about 1 cup)
Chopped parsley, 1 tablespoon
Salt and pepper, to taste
2 bay leaves
Oil for frying
Instructions:

Salt Cod Preparation:
Soak the salt cod for 24-48 hours, changing the water several times.
Transfer the salt cod to a pot, cover with cold water, add a pinch of pepper, and the bay leaves. Bring to a boil and simmer for about 20 minutes or until the cod is tender. Drain the cod, remove the skin and bones, and shred it into a crumb-like consistency.

Cook the potatoes in boiling water until soft.
