Im obsessed with this technique and wanted to try a few more versions. This one is by far the best yet. Succulent salmon, divine herb cream cheese, a mild aniseed hit from the fennel and sweet ginger honey. * fresh salmon - cut into chunks * 1 sheet ready-rolled puff pastry * Olive oil * Honey - I used ginger & turmeric from @maliks_honey * Salt and pepper * Fennel bulb - very thinly sliced * Fresh dill * Herb cream cheese - I used @paysanbretonuk * 1 beaten egg You will need a large baking sheet, mine is from the naturals range by @nordicwareuk Line the sheet with baking paper. Pre-heat your oven to 160C / 320F Drizzle a little olive oil onto four areas of the baking sheet. Then drizzle over some honey. Lay the fennel slices on top followed by some fresh dill and salt & pepper. Lay the salmon on top - roughly 3 pieces per tart. Cut the pastry into rectangular pieces and slather each one with cream cheese. Lay the pastry rectangles cream cheese side down onto the salmon. Fork the edges and score the top. Brush with egg wash and bake for 30 mins until the top is wonderfully puffed and golden. Remove from oven and slide a spatula underneath to flip them over. #upsidedown #pastry #viral #trending #salmon | Dominic Franks
